Carrot and Apple Salad
Ingredients
- 2 medium carrots, grated
- 1 medium apple, cored and grated (you can use a sweet variety like Fuji or Honeycrisp)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- A pinch of salt
- A pinch of black pepper
- Optional: 1 tablespoon raisins or chopped nuts (such as walnuts or almonds)
Instructions
- In a large bowl, combine the grated carrots and grated apple.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the carrot and apple mixture, and toss gently to combine.
- If desired, add raisins or chopped nuts for extra texture and flavor.
- Let the salad sit for about 5-10 minutes before serving to allow the flavors to meld.
