Lemon Herb Chicken
Ingredients
- 2 boneless, skinless chicken thighs (or breasts)
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1 teaspoon dried thyme (or your favorite herb)
- Salt and pepper to taste
Instructions
- Pat the chicken thighs dry with paper towels.
- In a small bowl, mix olive oil, lemon zest, thyme, salt, and pepper.
- Rub the mixture all over the chicken thighs and let marinate for 15-30 minutes.
- Heat a skillet over medium heat and add the chicken.
- Cook for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove from skillet, let rest for a few minutes, then serve warm.
